Libby’s Recipes: Berry Butter

With berry season approaching, I thought you might enjoy this yummy spread.

Berry Butter
8 ounce cream cheese, softened
1⁄2 cup butter, softened
1 cup powdered sugar
1 teaspoon vanilla or almond extract
1 cup fresh berries, mashed (strawberries, raspberries, blueberries – your choice)

Blend together everything except berries.
Gently fold in mashed berries.
Cover and refrigerate. Use within one week. Great on toast, pancakes, etc.
