Libby’s Recipes: Cream Cheese Potatoes

Cream Cheese Potatoes
8 oz. cream cheese, softened
4 cups hot mashed potatoes
1 egg, beaten
1/3 cup minced onion
1/4 cup chopped pimento
1 teaspoon salt
dash of pepper

Blend cream cheese into hot potatoes, then add remaining ingredients. Spread in greased casserole and bake 45 minutes at 350 degrees. Serves six.
