Libby’s Recipes: Japanese Zucchini and Onions

Here is another of my daughter Kate’s favorites:
Japanese Zucchini and Onions
2 tablespoons vegetable oil
1 medium onion, thinly sliced
2 medium zucchinis, cut in thin strips
2 tablespoons teriyaki sauce
1 tablespoon soy sauce
1 tablespoon sesame seeds (optional)
Ground black pepper

Warm oil in large skillet over medium heat. Stir in onions and cook five minutes. Add zucchini, stir and cook about one minute. Stir in teriyaki and soy sauces and sesame seeds and cook until zucchini is tender – about 5 minutes. Stir in ground pepper and serve immediately.
