Libby’s Recipes: Baked Fajitas

  Baked Fajitas
1 pound boneless, skinless chicken breasts (cut in chunks)
15 oz. can Rotel tomatoes w/ chilies
1 medium onion, sliced
1 large bell pepper, seeded & sliced
2 tablespoons olive oil
1 package Old El Paso burrito seasoning

Preheat oven to 400 degrees. Grease 9×13 baking dish. Place chunks of chicken in dish, then add onions and bell peppers. Add tomatoes with chilies, including juice. Mix oil & seasoning packet and pour over all. Bake uncovered 20-25 minutes and serve with warm tortillas. May serve with cheese, sour cream, salsa, rice, beans or toppings of your choice.
