Libby’s Recipes: Dijon Pork Loin

A main dish doesn’t get much easier than this.

Dijon Pork Loin
Small pork loin or pork roast
Salt and pepper
Dijon mustard
Brown sugar

Salt and pepper roast and place in roasting pan or casserole dish. Place in 425 degree oven for 30 minutes. Remove from oven and decrease oven temperature to 375 degrees. Coat top of roast with Dijon mustard and then pat brown sugar into mustard. Return to oven and cook to internal temperature of 175 degrees-about 30-40 minutes depending on size of roast.
