Libby’s Recipes: Carrot Cake Muffins

Carrot Cake Muffins
1 cup grated carrots
1 1/4 cups whole wheat flour
1 egg
1/2 cup honey
1/2 cup butter, melted
1/2 teaspoon cinnnamon
2 teaspoons baking powder
1 teaspoon baking soda
1/4 cup lemon juice
1/2 cup chopped nuts
(optional)

Combine all ingredients in a a large bowl and mix well. Pour
into greased muffin tins and bake for 20 minutes at 350
degrees. Makes 12 muffins
