Libby’s Recipes: Breakfast Burritos

Kate found this recipe online this week and tried it. This is an alternative to buying frozen breakfast burritos and sandwiches.

Breakfast Burritos
Ingredients:
1 lb. pork sausage
8 pkg. hash browns
8 to 12 large eggs
1/4 cup milk
1 pkg. shredded cheddar cheese
salt and pepper to taste
1 to 2 pkg. flour tortillas

Brown sausage and drain on paper towel. Cook hash browns in the same pan. While hash browns are cooking, in a large mixing bowl, whisk together the eggs, milk, salt and pepper. Add the sausage back into the pan with the browned hash browns, then pour in the egg mixture and cook until the eggs are done, stirring gently. Lay out the tortillas, and put the sausage, hash brown, and egg mix onto the tortilla, and sprinkle some cheese on top of the mixture. Roll into a burrito. Individually wrap each burrito in saran wrap, then place in freezer bags.
