Libby’s Recipes: Tomato Salad

Our recipe this week comes from Rocky Brunson and was passed on to him from his mother Mrs. Mildred Brunson. Rocky made this for the June birthday dinner at Latta United Methodist Church and I am told it was quite a hit.

Tomato Salad
6 medium tomatoes
1 green bell pepper
1 medium sweet onion
1 package bacon (fried and crumbled)
6 boiled eggs
2 sleeves Saltines (crumbled)
salt and pepper to taste
mayonnaise to mix consistency

Chop tomatoes, bell pepper, onion and eggs. Crumble bacon and saltines. Strain tomatoes and remove some of juice.
Mix all together, refrigerate and let sit one half day before serving.
