Libby’s Recipes: Pork Chop Casserole

We had this casserole last night and my husband actually said it was much better than he thought it would be. That is a compliment as he is not really a fan of casseroles.

Pork Chop Casserole
6-8 center cut pork chops
1 1/2 cups raw rice
1/2 cup chopped onion
1 can beef bouillon
Water (to total 3 cups when added to bouillon)
3 tablespoons oil

Brown pork chops in oil and remove from pan. Sauté onions in oil for a few minutes then remove and drain oil if necessary. Spray 9 x 13 casserole with Pam. Pour in rice, bouillon and water to total 3 cups liquid, and sautéed onions. Stir lightly. Place pork chops on top. Cover tightly with foil. Bake one hour at 350 degrees. May also add chopped bell pepper with onions, mushrooms, or sliced almonds. Also salt and pepper to taste.
