Libby’s Recipes: Pineapple Casserole

I am planning to make this pineapple casserole for Easter Sunday. It’s a little different from the one I usually make in that this one calls for brown sugar.

Pineapple Casserole
20 ounce can pineapple chunks in own juice, drained
1/2 cup brown sugar
1 cup grated cheese
3 tablespoons flour
1/2 stick margarine, melted
Ritz crackers, crushed

Spray casserole with Pam. Place pineapple chunks in casserole. Mix sugar, cheese and flour and spread over pineapple. Cover with crushed crackers. Pour margarine evenly over top. Bake at 350 degrees for 20-25 minutes or until browned on top. Makes six servings. Recipe can easily be doubled or tripled.
