Here is a recipe that should fit into your fall menu.
Sweet Potatoes with Applesauce
4 medium size sweet potatoes
1 cup unsweetened applesauce
2/3 cup firmly packed brown sugar
3 tablespoons butter, melted
1⁄4 teaspoon salt
Place sweet potatoes in pot, cover with water. Boil about 30 minutes or until tender. Let cool enough to peel. Peel and slice 1⁄4 to 1⁄2 inch thick. Arrange slices in lightly greased casserole. Combine all other ingredients and pour over potatoes. Bake, uncovered, at 350 degrees for about 20 minutes or until heated through. (I think I would add a little cinnamon to this, too.)
