Libby’s Recipes: Hashbrown Potato Pie

Back by popular demand is a recipe from my sister.

Hashbrown Potato Pie
5 eggs
1/2 cup milk
3 cups frozen shredded hashbrowns, thawed
1/3 cup green onions, chopped
1/2 teaspoon salt
1 1/2 cups grated sharp cheddar cheese, divided
4 slices cooked bacon, crumbled

Mix first five ingredients with 1 cup of the cheese and 2 slices of the bacon. Bake 25-30 minutes at 350 degrees. For the last 4 minutes, top with remaining 1/2 cup cheese and 2 slices of bacon. Bake in 8 x 8 casserole sprayed with Pam.
