Libby’s Recipes: Hashbrown Potato Pie

Thanks to my sister, Judy, for this recipe. They like it for supper.

Hashbrown Potato Pie
5 eggs
1/2 cup milk
3 cups frozen shredded hashbrowns, thawed
1/3 cup green onion,  chopped
1/2 teaspoon salt
1 1/2 cups grated sharp cheddar cheese (divided)
4 slices cooked bacon, crumbled

Mix ingredients, reserving 1/2 cup cheese and 2 slices bacon. Bake in greased casserole 25-30 minutes at 350 degrees. Four minutes before baking time is up, top with remaining 1/2 cup cheese and 2 slices crumbled bacon and return to oven for those last four minutes.
