Libby’s Recipes: Tomato Pie

This recipe is one a lot of my friends have been making this summer. What better time for a tomato recipe?

Tomato Pie
1 baked pie shell
4 cups tomatoes, cut in bite-size pieces
Salt and pepper to taste
6-8 fresh basil leaves, chopped
1 bunch green onions, chopped
1 1/2 cups mozzarella cheese, grated
1 1/2 cups mayonnaise (optional)

Bake pie crust. Salt and pepper tomatoes and let drain.
Mix basil and onions (use about half of the green part of onions) with tomatoes.
Pour tomato mixture into pie crust and top with cheese and mayo mixture.
Bake 15 minutes in 350 degree oven.
