Libby’s Recipes: Tangy Light Marinade

This week’s recipe comes from my late Aunt Sue McCormac, my mama’s baby sister and quite a good cook.

Tangy Light Marinade

1 cup unsweetened pineapple juice
1/3 cup soy sauce
1 teaspoon ground ginger
1 small clove garlic (or crushed garlic)
1/3 cup reduced calorie Italian salad dressing

Combine all ingredients. Use to marinate top round steak for London broil or pork chops before grilling.
