Libby’s Recipes: Peach Pie

In keeping with easy, here is a simple recipe for a peach pie.

Peach Pie

1-1/2 to 2 cups fresh sliced peaches
1 egg
1/2 cup sugar
2 teaspoons lemon juice
3 teaspoons margarine
2 pie shells

Mix lemon juice and peaches. Beat egg and mix with sugar. Add peaches. Pour into pie shell. Drizzle with melted margarine. Top with second pie crust. Bake at 350 degrees for 20-25 minutes.
