Libby’s Recipes: Linda’s Brunch Fruit Salad

My search for a cool recipe to help beat the heat brought me to this one from my sister. She got it from her neighbor Linda Powell.

Linda’s Brunch
Fruit Salad
20 ounce can pineapple chunks (in own juice)
2 large firm bananas, cut in 1/4 inch chunks
1 cup green grapes
15 ounce can mandarin oranges (drained)
1 golden delicious apple, chopped
1 red delicious apple, chopped
1/2 cup sugar
2 tablespoons cornstarch
1/3 cup orange juice
1 tablespoon lemon juice

Drain pineapple, reserving juice. Combine all fruits in large bowl, set aside. In saucepan, combine sugar and cornstarch. Add orange juice, lemon juice and reserved pineapple juice to saucepan. Stir until smooth. Bring to a boil. Reduce heat. Cook and stir for 2 minutes. Pour over fruit and mix gently. Cover and refrigerate.
I’m going to make this for our next family gathering.
Try to stay cool. And Happy Trails!
