Libby’s Recipes: Chicken Casserole

Can you believe it? Here is another chicken casserole – and it is pretty good.

Chicken Casserole
2 large chicken breasts
1 can cream of chicken soup
8 oz. sour cream
Poppy seeds
Almonds, sliced or slivered
Ritz crackers, about 3/4 of a sleeve
Butter, about 1/4 cup, melted

Preheat oven to 350 degrees. Stew, skin, debone and chop chicken.
Combine chicken, soup, and sour cream and pour into lightly greased casserole, about an 8 x 8 size.
Sprinkle top with poppy seeds and almonds.
Top with crushed Ritz crackers & drizzle with melted better. Bake approximately 30 minutes at 350 degrees.
I added a little chicken stock to the soup mixture to thin it out just a bit.
