Onion Casserole

I’m still enjoying my Methodist onions and have used a good many of them in this casserole:

ONION CASSEROLE
2-3 large sweet onions
1 can Cream of Mushroom soup
1/2 to 3/4 stick margarine, melted
Bread crumbs
Cheddar cheese, grated

Spray 9 x 13 casserole with Pam.  Thinly slice onions and place in casserole 2-3 layers deep.  Spoon soup over onions.  Drizzle with melted margarine and sprinkle with bread crumbs.  Bake in 350 degree oven for one hour.  Twenty minutes before hour is up, top with grated cheese and return to oven.  I let mine stay more than 20 minutes until it cooks down really thin and cheese topping is brown and crusty.  This is good with steaks and burgers.  And chicken, too, according to my co-workers.
