Libby’s Recipes: Mama’s Pimento Cheese

This week’s recipe is the other sandwich my mother took to every church dinner-on-the-grounds.

Mama’s Pimento Cheese

1 pound sharp cheddar cheese
7 oz. jar pimento (use the juice, too)

Grate the two together. Add salt to taste and mayonnaise to correct consistency. Beat with electric mixer until creamy and smooth. You may mix sharp and medium cheese if you like.
