Libby’s Recipes: Pecan Pie Cupcakes

Pecan Pie Cupcakes
1 cup chopped pecans
1/2 cup plain flour
1 cup packed brown sugar
2/3 cup butter, melted
2 eggs

Preheat oven to 350 degrees. Combine all ingredients in medium bowl and mix well. Spray miniature muffin tins with Baker’s Joy. Fill 3/4 full. Bake about 18 minutes. Remove from oven and let sit only one minute before sliding cupcakes onto cooling rack. Be sure to generously spray the tins with the Baker’s Joy. Also, do not over fill the tins or they will overflow.
