Libby’s Recipes: Strawberry Pretzel Salad

This three layer salad combines two of my favorite flavors, sweet and salty.

Strawberry Pretzel
Salad
Bottom layer (crust)
2 cups crushed pretzels
1/4-cup sugar
1 1/2 sticks margarine, melted

Middle Layer
8-oz. cream cheese, softened
1 cup sugar
8-oz. Cool Whip

Top Layer
2 cups pineapple juice
2 (3-oz.) boxes strawberry Jello
2 (10-oz.) pkg. frozen strawberries

Mix crust ingredients and spread in greased 9×13 pan. Bake at 350 degrees for 10 minutes.
Mix ingredients for middle layer, then spread over cooled crust.
Boil pineapple juice and dissolve Jello in juice. Cool slightly.
Add strawberries to Jello mixture and place in refrigerator for 5 to 10 minutes.
Spread strawberry mixture over middle layer. Refrigerate. Yum, yum!
