According to Betsy, the pimento cheese recipe has generated the most interest.
In fact, so many people have asked for it that we decided to run it again.
So here, back by popular demand, it is my mother’s pimento cheese recipe.
1 lb Velveeta Cheese
1 lb med. Cheddar cheese
1 lb Sharp Cheddar cheese
1 pt. Miracle whip
8 oz chopped pimento
3 T. Sugar
Salt and pepper to taste
Grate cheese and allow to soften. Mix with other ingredients. Yields two quarts. What is not used immediately can be packed into small cartons and frozen.
